This course deals with structure, composition and chemical and biochemical reactions in foods during postharvest/postmortem, processing, storage and utilisation; implications for organoleptic properties, nutritional value, toxicity and human health.
Estimated Enrollment: 160
Estimated TA Support: Invigilators for term test and final exam.
Class Schedule: To be arranged
Sessional Dates: September to December 2007
Salary: To be negotiated
Qualifications: Applicants should have a PhD degree in Nutritional Sciences or related field and have prior experience as a lecturer.
Duties: Normal teaching duties (provide lectures, grade assignments, set exams, etc.)
